It’s one of those classic desserts that always disappears quickly, whether it’s served after a backyard barbecue, Sunday dinner, or a family celebration.

How to Make Strawberries and Cream Pie

  • Preheat Oven and Bake Pie Shell – Blind bake a 9-inch pie shell, then cool.
  • Prep Strawberries – Rinse and hull the strawberries. In a food processor puree enough strawberries to equal 1 cup and halve the rest. Set aside.
  • Make Strawberry Sauce – Cook together the granulated sugar, water and pureed strawberries. Bring to a boil stirring constantly until the sugar has dissolved. Lower the temperature to medium-high.
  • Thicken – Dissolve cornstarch in cold water whisking into the strawberry sauce. Continue to cook until thickened. Once thickened, remove from the heat and stir in 1/4 tsp almond extract then set aside to cool.
  • Food Coloring – Adjust the color by adding a few drops of red food coloring, if desired.
  • Whipped Cream Filling – Using an electric mixer to beat together the cream cheese, powdered sugar, heavy cream, lemon juice and vanilla extract. Spread onto the bottom of the cooled pie shell.
  • Assemble – Arrange the halved strawberries in rows starting at the center of the pie. Pour the glaze on top.
  • Serve – Chill until set, then serve with whipped cream.

  • Chill a large bowl and beaters.
  • Using an electric mixer on medium-high speed whip 2 cups heavy cream with 1 teaspoon vanilla extract.
  • Gradually add 1/4-1/3 cup granulated sugar to the bowl. You can adjust the sweetness to your taste.
  • Whip until stiff peaks form then refrigerate until serving.

Storage and Leftovers

  • Leftovers – Store Strawberries and Cream Pie covered with plastic wrap or in an airtight container chilled in the refrigerator for up to 3-4 days.
  • Freezer – You can freeze this pie for up to 1 month. Thaw in the fridge and enjoy. It’s best to freeze without the whipped cream on top, simply add that prior to serving.

Ingredients

  • 1 9 inch deep dish pie crust baked and cooled

  • 1 8 oz cream cheese softened
  • 1/3 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 Tbsp fresh lemon juice
  • 1 tsp pure vanilla extract
  • Sweetened fresh whipped cream for serving

Instructions

  • Using a hand mixer, beat together the cream cheese, powdered sugar, heavy cream, lemon juice and vanilla extract until fully combined. Spread cream cheese mixture onto the bottom of the cooled pie shell.
  • Arrange the halved berries in rows starting at the center of the pie. Pour the glaze on top. Chill for at least 2-3 hours or until set.
  • Serve with whipped cream.
