Strawberry fluff is a delightful light and airy dessert that features a base of whipped cream or whipped topping mixed with fresh strawberries, mini marshmallows and in this recipe I include crushed graham crackers for added texture. The combination of textures is delightful delivering creamy from the whipped cream, juicy from the strawberries, and a hint of marshmallow-like softness. Serve it chilled, as a dessert salad or side dish at picnics, barbecues, or any gathering where something sweet and refreshing is in order.   • Cream Cheese and Cheesecake Pudding – Use an electric mixer to cream together the cream cheese, pudding mix and vanilla extract. Beat on medium-high speed until fluffy and combined.
  • Condensed Milk and Strawberry Ice Cream Topping – To the bowl add the sweetened condensed milk and strawberry ice cream topping. Beat on medium high speed until thickened.
  • Add Strawberries and Whipped topping – By hand fold in the diced strawberries and 1 whole container plus one half of the second container of whipped topping. (Reserve the rest for garnishing.)
  • Marshmallows – Once combined add the mini marshmallows, mixing to fully distributed.
  • Fridge – Place into an airtight container and chill for 4 hours or overnight.
  • Graham Crackers – Just before serving, mix in the broken graham crackers.
  • Garnish – Serve garnished with reserved whipped topping, graham cracker crumbs and strawberries.

How to Make the BEST Strawberry Fluff Recipe

  • Key ingredients you’ll need to make homemade Strawberry Fluff: Plain neufchatel or classic cream cheese, fresh strawberries, instant cheesecake pudding mix, sweetened condensed milk, vanilla extract, strawberry ice cream topping or strawberry preserves, mini marshmallows and crushed graham crackers.
  • Kitchen tools you’ll need: Large bowl, electric hand mixer or stand mixer, rubber spatula, measuring cups and spoons, sharp knife and cutting board and strawberry huller.
  • To make fluff you will need a mixer. It’s important to combine the cream cheese and pudding mix thoroughly to make sure it has a smooth and creamy consistency.
  • Will the graham crackers soften? Just like the vanilla wafers in banana pudding, the graham crackers will naturally soften once combined with the remaining ingredients. If you prefer, you can omit the graham crackers in the fluff and use only the crumbs as a garnish.
  • Can you use frozen strawberries to make fluff? You could but fresh is ideal. Should you choose to use frozen, they should be thawed and drained prior to mixing with the remaining ingredients.
  • Store Strawberry Fluff in an airtight container chilled in the fridge for up to 3 days.
  • Leftovers: You can freeze strawberry fluff as well. Freeze it for up to 2 months and thaw in the refrigerator overnight. Mix well to combine prior to serving.

Ingredients

  • 2 8 oz blocks plain neufchatel or regular cream cheese softened
  • 1 3.4 oz box instant cheesecake pudding mix
  • 1 tsp vanilla extract
  • 1 14 oz can sweetened condensed milk
  • 1/2 cup strawberry ice cream topping OR strawberry preserves
  • 4 cups diced fresh strawberries (1/2-inch cubes)
  • 2 cups mini marshmallows
  • 1 cup roughly broken graham crackers plus 1/4 cup crumbs for garnishing (one sleeve of 8 graham crackers)
  • 2 8 oz containers frozen whipped topping thawed

Instructions

  • In a large mixing bowl use an electric mixer to cream together the cream cheese, pudding mix and vanilla extract. Beat on medium-high speed until fluffy and combined.
  • To the bowl add the sweetened condensed milk and strawberry ice cream topping. Beat on medium high speed for 2 minutes until thickened.
  • By hand fold in the diced strawberries and 1 whole (8 ounce) container plus one half (4 ounces) of the second container of whipped topping. (Reserve the rest for garnishing.)
  • Once combined add the mini marshmallows, mixing to fully distributed.
  • Place into an airtight container and chill for at least 4 hours or overnight.
  • Just before serving, mix in the broken graham crackers and serve garnished with reserved whipped topping, graham cracker crumbs and strawberries.

Notes
