- For this particular recipe, I use old fashioned oats for the texture. They really soak in the filling beautifully and maintain their integrity while baking.
- The apple pie filling makes enough to allow for plenty to put on top. If you don't want to serve apples on top, it can easily be halved.
- The apple filling can also be prepped in advance and chilled until your ready for it. Just gently warm it in the microwave for serving. You may need to add a little water to thin.
- Should you prefer, you could make this recipe without the apples with no other adjustments needed.

Apple Baked Oatmeal Recipe
Ingredients
- Apples:
- 4 large Granny Smith apples peeled, cored cut into ½ inch cubes
- ⅓ cup water more, if needed to thin
- 2 Tbsp lemon juice
- ¼ cup granulated sugar
- 1 tsp apple pie spice or ground cinnamon
- Oats:
- 3 cups old fashioned oats
- 1 cup packed dark or light brown sugar
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp salt
- ½ cup chopped walnuts or pecans
- 2 large eggs
- 1 12 oz can evaporated milk
- ½ cup salted or unsalted butter melted
- 2 tsp pure vanilla extract
Instructions

To make apples: In a medium-size saucepan add apples, water, lemon juice, sugar and apple pie spice. Simmer over medium heat for 10-15 minutes just until softened. Set aside.

Preheat the oven to 350°F. Spray a 9 x 9 inch pan or similar, with cooking spray. Set aside.

In a medium-size mixing bowl, use a whisk to sift together oats, sugar, baking powder, cinnamon, salt and nuts.

In a separate bowl, whisk together, milk, butter, eggs and vanilla. Add to dry ingredients, using a spoon to mix until fully moistened. Mix in 1 cup cooked apples. (Keep remaining apples warm for serving)

Spread into prepared pan. Bake for 35-40 minutes or until set.

Serve immediately topped with remaining cooked apples drizzled with caramel or maple syrup or cream.
Notes
- Low fat evaporated milk works well in this dish.
- This recipe can be adapted using Splenda Brown Sugar Blend in place of brown sugar.
