I love making slab pies year-round. This Southern Apple Slab Pie is family favorite and a true crowd-pleaser, perfect for holidays, (hello, thanksgiving!) potlucks, and family gatherings. It’s baked on a large jelly roll pan, then cut into squares for serving. Slab pies are designed to serve plenty of dessert lovers at one time, and this recipe brings all the cozy flavors of classic apple pie to dessert.

The flaky, butter pie crust is made from scratch and you can make the crust one day in advance, then assemble the pie just before baking, for a time saver. The tender, cinnamon-spiced apples bake up soft and sweet, with the bonus of filling the kitchen with the spicy aroma of autumn and homemade comfort. The crunchy toffee walnut streusel on top is what makes this pie extra special, adding a nutty praline-like flavor that brings an irresistible Southern touch.

  • Form into a Disc and Chill -Turn out onto a silpat or lightly floured work surface, and using your hand, form into a flattened disc. Wrap in plastic wrap and refrigerate.
  • Roll Pie Dough – Use a floured rolling pin and roll into approximately a 17 x 14-inch rectangle leaving enough overhang to form the sides of the crust.
  • Heat Oven and Prepare Pan – Spray a jelly roll pan with baking spray or brush with butter.
  • Press Crust into Pan – Fit crust into pan crimping the edge. Keep chilled while you prepare the apples and streusel.
  • Prep the Apples – Toss sliced apples with all-purpose flour, granulated sugar, brown sugar, apple pie spice and ground cinnamon. Arrange the apples over the crust.
  • Make the Crumb Topping – Stir together the vanilla wafer crumbs with brown sugar, cut butter into the crumbs until it resembles peas.
  • Walnuts – Sprinkle the walnuts over the apples, top with the buttered vanilla wafer crumbs and toffee bits.

Use both crusts allowing them to warm to room temperature per the package instructions so the pastry will be pliable, then press into the pan.
  • Apples – You can use your favorite variety of apples for this recipe. Gala apples, braeburn apples, mcintosh apples or honeycrisp apples all work well. Keep in mind that different varieties of apples will yield a different taste and texture as well.
  • Lemon Juice – You can toss the apples with a couple of tablespoons of lemon juice to prevent browning and oxidizing while you work. 
  • Nuts – You could use pecans in place of walnuts.
  • Vanilla Wafers – You could use crushed shortbread cookies, like pecan sandies, in place of vanilla wafers. You could also use Biscoff cookie crumbs.
  • English Toffee Bits – The toffee bits used for this recipe aren’t coated with chocolate. You may also see them called bits-o-brickle and they’re readily available on the baking aisle with the other baking chips.
  • Crumb Topping – As with any streusel topped dessert, the streusel is at its most crispy the day it’s made. You could crisp it under the oven broiler (don’t walk away!) or in an air fryer.
  • Serving Options – This recipe is ideal when baking for a crowd. It’s equally delicious served warm with vanilla ice cream, chilled or at room temperature with a dollop of whipped cream.

Storage and Leftovers

  • Leftovers – Store leftover Apple Slab Pie covered with foil or in an airtight container chilled in the refrigerator for up to 5 days. Store at room temperature for up to 3 days.

Ingredients

  • Pie Crust:
  • 2 1/4 cup all-purpose flour
  • 3 Tbsp granulated sugar
  • 1 tsp salt
  • 1 cup cold butter or butter flavored vegetable shortening cubed
  • 6-8 Tbsp ice water

  • 3 lb apples, cored, peeled and sliced 1/4-inch thick [Around 10 cups sliced]
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1/4 cup all-purpose flour
  • 1 tsp apple pie spice
  • 1 tsp ground cinnamon
  • Streusel Topping:
  • 1 cup vanilla wafer crumbs
  • 1/2 cup cold butter cubed
  • 1/2 cup light brown sugar
  • 1 cup chopped English walnuts
  • 1/4 cup English toffee bits

Instructions

  • Pie Crust: Use a whisk to sift together the flour, sugar and salt.
  • Add 1 cup cubed butter or butter flavored vegetable shortening.
  • Use a pastry cutter or a food processor to cut the butter into the dry ingredients until it resembles coarse cornmeal.
  • Add 6-8 Tbsp of ice water 2 Tbsp at a time until it forms a soft dough.
  • Turn dough out onto a silicone mat or lightly floured surface, and turn just until it comes together. Form into a flattened disc and wrap in plastic wrap. Rest in the fridge for at least 1 hour or overnight.
  • Assemble: Unwrap chilled pie dough place onto a silicone mat or lightly floured surface. Use a floured rolling pin and roll into approximately a 17×14-inch rectangle leaving enough overhang to form the sides of the crust.
  • Lightly spray a 15x10x1-inch jelly roll pan with baking spray or brush with melted butter. Fit pie crust into pan forming an edge. Keep chilled while you prepare the apples and streusel.
  • Apples: In a large bowl toss sliced apples with all-purpose flour, granulated sugar, brown sugar, apple pie spice and ground cinnamon. Arrange the apples over the crust.
  • Streusel Topping: In a small bowl toss together the vanilla wafer crumbs with 1/2 cup brown sugar.
  • Using a food processor or pastry cutter cut 1/2 cup cold butter into the crumbs until it resembles peas.
  • Sprinkle the walnuts over the apples first, then cover the top of the pie with vanilla wafer crumbs. Sprinkle 1/4 cup toffee bits on top.
  • Place into a preheated 375°F oven. Bake for 45-50 minutes until the streusel is golden brown and the apples are tender.
  • Slice into squares and serve warm with vanilla ice cream or at room temperature with whipped cream,
