Baked Brie

This sweet and salty Baked Brie is one of the easiest appetizers you’ll ever make! It only takes 15 minutes to bake, and then it’s ready to serve topped with sweet honey and warm toasted pecans. Enjoy it with baguette slices, crackers, apples or pita chips for dipping in the gooey honey pecan sauce.

Do You Cut the Rind Off Brie Before Baking?

The rind on brie cheese has an earthy taste and soft texture. It’s completely edible, and it’s unnecessary to remove it prior to baking, unless you simply want to. You can scoop it up and eat it right along with the melty cheese. I choose to scrape a bit from the top in this recipe, just so the honey can permeate the cheese quickly after baking, but this is optional.

Ingredients to Make Baked Brie

This melted cheese starter takes very little prep time. It’s so easy to make, and it always makes an impression on guests. Depending on how many people you’re serving, you can include it as part of a meat and cheese board or enjoy it on its own with fresh fruit and dippers on the side. For this recipe, I’m using simple toppings but the sky’s the limit with variations. You could also enjoy brie with You can also top baked brie with caramelized onions or bacon jam for a smoky flavor.   • Brie – One large 16-18 ounce wheel of brie.
  • Nuts – Pecan halves for crunch.
  • Honey – Sweet honey adds contrast to the salty flavor of the cheese.
  • Serve – Crackers, baguette slices, bagel chips, apple slices, grapes and pita chips for serving.

How to Make the BEST Baked Brie Recipe

  • Bring the Brie to Room Temperature: Remove the brie from the fridge and let stand for 30 minutes.
  • Heat Oven and Prepare Skillet: Preheat the oven to 350°F. Brush an 8-inch cast iron skillet or baking dish with softened butter.
  • Remove the Packaging: Unwrap the brie and discard paper.
  • Scrape the Top: Using the edge of a sharp knife, lightly scrape some of the rind from the top. Score at 1/2-inch intervals rotating the wheel of brie to create a diamond pattern.
  • Oven: Bake per the recipe until softened and gooey.
  • Meanwhile Toast Pecans: Spread the pecan halves in a single layer on a sheet pan. Bake with the brie for 6-8 minutes or just until lightly golden and fragrant.
  • Toss Warm Pecans with Honey: Pour the pecans into a bowl and stir to coat with 1/2 of the honey.
  • Assemble: Remove the brie from the oven and spoon the honey pecans on top. Drizzle the top with the remaining honey.
  • Serve: Dip into the cheese with sliced baguette, crackers, apple slices, grapes, pita chips or bagel chips.

Tips for Making Baked Brie

  • Kitchen Tools You’ll Need: 8-inch cast iron skillet or similar size baking dish, sheet pan, sharp knife, measuring cups, small bowl and tablespoon.
  • Scraping the Rind: The rind of brie cheese is totally edible. It has an earthy flavor and will soften as the cheese bakes. I like to scrap just a bit from the top and score the top with the tip of a knife, so the honey will meld with the cheese. Scraping the rind is optional, you may opt to leave it completely intact with no other adjustments needed.
  • Adjust the Baking Time if Using a Smaller Wheel: The brie I used, I picked up at my local Costco. It’s slightly over 1 1/4 pounds and super creamy. This recipe and technique will work with a smaller wheel of cheese. A smaller half pound wheel will bake more quickly, so keep an eye on it and check it around 10 minutes then add time from that point.
  • Parchment Paper: If you want to be able lift the brie from the pan for serving on a platter or cheese board, place a piece of parchment paper into the skillet. Leave enough overhang for “handles” to make it easier to lift from the pan after baking.
  • When to Serve Baked Brie: This melty cheese can be served as an appetizer any time of year. Serve it when entertaining friends and family, for wine and cheese parties, potluck gatherings, tea parties, Christmas starters, New Year’s Eve, Thanksgiving or Easter.

Recipe Variations

  • Nuts: You could use toasted walnuts, pistachios, almonds or cashews in place of pecans.
  • Honey: You could use maple syrup in place of honey.
  • Jam: You can spoon your favorite flavor of jam over brie and enjoy it using raspberry jam, blueberry jam, strawberry, jam, fig jam or apricot jam.
  • Wedge of Brie: You can use this same technique using a smaller wheel of brie or a wedge of brie. Adjust the baking time as they will likely take less time to bake.
  • Herbs: You can garnish this baked brie with fresh thyme or a sprig of fresh rosemary.
  • Toppings: You can also top baked brie with caramelized onions or bacon jam.

Storage and Leftovers

  • Leftovers: Store baked brie in an airtight container chilled in the fridge for up to 4 days.
  • Reheating: Reheat in a microwave safe bowl or pop it back into a preheated 350°F oven until melted.
  • Freezer: I don’t recommend freezing leftovers as it effects the texture of the brie when thawed.

  • Meanwhile, spread the pecan halves in a single layer on a baking sheet. Place into the oven and bake along with the brie for 6-8 minutes or just until lightly golden brown and fragrant. Remove the pecans from the oven and pour into a small bowl. Stir to coat with 1/2 of the honey.
  • Remove the brie from the oven and spoon the honey pecans on top. Drizzle the top of the cheese with the remaining honey. (You can use more or less honey, to your taste.)
  • Serve immediately with sliced baguette, crackers, apple slices, grapes, pita chips or bagel chips.
